
A renewed taste for solids must be a good sign. For the first time this afternoon I found myself craving something more than shakes or soup. Luckily we had a few hundred grams of halloumi in the fridge, along with some pita bread that needed eating and the delicious peanut garlic chutney my mom brought on her last visit to Berlin. It's really that last that I should post a recipe for, but that'll have to wait for another day. For now, here's a quick treat for anyone lucky enough to know where to find good halloumi.
Halloumi sandwich for a girl on the mend
Cut about 100 grams (3.5 oz) of halloumi into third-of-an-inch slices. Cook in a fatless nonstick skillet on medium-low heat, turning once, so that each side is golden and crispy. Place in a freshly toasted pita bread spread with a spicy chutney of your choosing. Garnish with two generous handfuls of roughly chopped flat-leaved parsley.
